Moulded chocolate bonbons are the pinnacle of confectionery craft — small, jewel-like pieces that combine a precisely tempered shell with a rich, complex filling. Unlike hand-rolled truffles, bonbons require polycarbonate moulds and a more controlled process, but the results are strikingly professional. Once you've made your first batch of glossy, perfectly domed bonbons, it's difficult to go back to anything simpler. This guide takes you through every stage of the process.

Choosing and Preparing Your Moulds

Polycarbonate moulds are essential for professional-quality bonbons. Unlike silicone moulds, polycarbonate conducts heat predictably and produces a high-gloss finish because properly tempered chocolate contracts slightly and releases cleanly. Clean your moulds with a dry, lint-free cloth before use — any fingerprints, water spots, or residue will transfer to the finished chocolate. Polishing the cavity walls with a cotton ball removes microscopic scratches and improves gloss further. Moulds are available in hemispheres, rectangles, and dozens of decorative forms. For beginners, a simple hemisphere 30mm mould is forgiving and allows you to see the shell thickness easily.

Making and Setting the Shell

Pour tempered chocolate into the mould cavities, filling them completely. Immediately invert the mould over your chocolate bowl and tap firmly to release most of the chocolate, leaving a thin coating on the walls. Scrape the top of the mould clean with a palette knife and place it upside-down on a rack over parchment for two to three minutes to allow excess to drip. Once set, check the shell thickness — 2mm to 3mm is ideal. Too thin and the bonbon will crack when unmoulded; too thick and the filling-to-shell ratio suffers. Place the mould in a cool room (18°C to 20°C) for 15 minutes to crystallise fully before filling.

Creative Filling Ideas

The filling is where your creativity shines. Classic salted caramel ganache (dark chocolate, double cream, dry caramel, and fleur de sel) is universally loved. Raspberry pâte de fruit — a firm fruit jelly made from fresh raspberry purée and pectin — adds vibrant acidity. Praliné, made by grinding caramelised hazelnuts to a smooth paste, delivers nutty richness. Coffee ganache (infuse cream with freshly ground espresso beans overnight) works beautifully in milk chocolate shells. For adventurous palates, a miso and white chocolate ganache or a yuzu curd offers unexpected complexity. Whatever filling you use, ensure it's at room temperature when piped — cold filling can shock the shell and cause cracking.

Closing, Setting, and Unmoulding

Once your filling has crystallised or set (typically 30 minutes at room temperature for ganache), pipe or spoon it into the shell cavities, leaving a 1mm to 2mm gap at the top. Let the filling set fully, then pour another layer of tempered chocolate over the mould to create the backing, scraping level with the palette knife immediately. This backing layer must be thin and even. Allow to crystallise for 20 to 30 minutes, then flex the mould gently — you should feel the bonbons releasing. Invert over a clean surface and tap; they should fall cleanly. Any that stick need more crystallisation time. Store finished bonbons in a single layer in an airtight container at 16°C to 18°C.

Conclusion

Making moulded bonbons is a skill that compounds — each batch teaches you more about shell thickness, filling consistency, and the subtle signals that tell you your chocolate is perfectly tempered. The investment in quality moulds and a reliable thermometer pays dividends over hundreds of batches.
