  • Dip a knife or spatula in chocolate and set at room temp (65-70°F)
  • Should set within 3-5 minutes with glossy finish
  • Snap should be crisp and clean
  • No streaks, spots, or bloom should appear
  • Chocolate should contract and release from mold easily
